You are totally right ! I chose not to do this "Bain Marie" because the recipe would get too complicated… Anyway this doesn't dry out the eggs because of the cream inside.
You don't put the pot in a pan of water during baking? I've seen other recipes for oeufs en cocotte call for this. Just wondering if omitting this would dry out the egg.
