G’day Joe from down under Australia 🇦🇺, I gave this a go tonight and I did change the potatoes a little…..I sliced them and cooked them in water for about 10 minutes and then put them into our mixture. The result was amazing as I layered them in a potato scallop formation. Joe you were in our kitchen tonight and your heart and soul made this amazing mate. Thanks for sharing such a great family recipe.   3. I do the same thing when I cook, I'm always smelling the ingredients. Especially the herbs and garlic. One of my favorite ingredients I love to smell all the time when I use it, is cardamom.

  4. Constructive criticism… zooming in camera work is a little fuzzy, like soft focus. I’d love to see the detail in your fabulous creations. Not sure how to get sharper focus as I’m not a camera person.
