  1. Nice video; however, the polenta is WAY too stiff. It should be "all'onda". In other words, it should flow like a wave, similar to a good risotto but perhaps a little bit more viscous. You should be able to still pour the polenta out of the pot even after it thickens a bit with the addition of Parmigiano-Reggiano at the end. You should be able to eat it on a plate with a fork, but just barely. You should not be able to stand a fork up in your finished polenta . Otherwise, a good video.
