I have an Indian friend who has taught me some basics of Indian cooking (more strategy than recipees) and one thing he does is very similar to this, a yogurt marinade for chicken overnight in the fridge. He uses a lot more yogurt, and at first I thought it sounded gross. He does it with wings, but I prefer thighs. the yogurt (sp?) helps preserve the moisture in th meat and gives a tasty, beautiful crust and flavor. I may try a variant of this, but probably with more yogurt – never thought I would say that. Keep an open mind and pallete and you win, at least most of the time.

  2. Ok chef John, I know this is an old video, but here's a crazy idea; what if you made your buttermilk fried chicken recipe, but instead of buttermilk used a tarragon Greek yogurt marinade? I'm super interested to see how that would turn out! I think maybe awesomely tasty.
