  1. Made this about 5 times over the last year and it's always a huge winner. Some changes I make…. I double the recipe and make a huge pot. Definitely crush those tomatoes by hand (at 1:45) instead of leaving them whole like that. LOL I add 2 cups macaroni pasta, add 1 chopped onion, and triple the garlic called for. Finally, top the bowl with parm cheese by all means.

  2. very good soup, I make mine almost the same. I drain liquid from beans, I have to watch my salt intake. I figure sausage has enough salt. I used chicken broth or beef & pecorino romano cheese. Sometimes I use escarole instead of spinach. Both are good
