  1. i would sear it first and cook it slowly at somewhere like 80 fahrenheit until it reaches 56 at core temperature. take my searing pan, toss some onions garlic and sage, deglaze with half a bottle of red, reduce, put some stock, reduce, sieve, then mount with butter and adjust the seasoning, while resting the meat for a bout 15 to 20 min.
