    How to cook a beef fillet wrapped in Italian ham with garlic, rosemary and Chianti classico
    For 6
    1kg beef fillet, trimmed
    16 slices coppa di Parma
    4 plum, tinned tomatoes
    4 garlic cloves, 2 peeled and finely sliced, 2 left whole
    2 large gasses of Fontodi, Chianti Classico
    3-4 sprigs fresh rosemary, leaves picked from stalks
    50g unsalted butter
    Olive oil
    Maldon salt and freshly ground black pepper
