Thank you very much for this great recpie. I've always had the problem so far that my sauces were too thin and liquid, more like soup. Even without blending this sauce is very thick and sticks with the pasta. Cooking without stirring was no problem, not even in my cheap IKEA pot. nothing burned. I saw this some time back and finally made it tonight. With all the prep done cook time is just a little longer than cooking the pasta (from cold water to drained). Wife was skeptical after seeing all the splatter at the early stage but we killed the whole pot of sauce and 500g of spaghetti and would have eaten more if it was there. Fantastic.
I work with two Italians in a 5 person office, and we cook communal lunch everyday, trading off chef duties. Gonna make this and see what the reaction is.

I am just trying to look at the ingredients and found that i dont have red wine vinegar. is there an easy substitute or can i do away without it? The recipe looks too tempting to be not tried

Might be a good idea to place a splatter guard on top to prevent the immediate vicinity of the stove top and chef to be covered in volcanic splatterings of sauce.

we did this but added black olives and lot garlic it was great
