  1. looks amazing, I can imagine the smell.
    Top tip for ya, used it for years, works every time, and will save you an hour.
    -First pour a full kettle of boiling water over the pork (nice and slow, about 30seconds) and towel down straight away.
    That will draw out 99.99% of the water as well as open up the pores, this in turn helps the salt get in.
