  1. Excellent dish. I went vegan with this one using soy cream. If you decide to go that route, I would say go easy on the pasta water, and harder on the cream as it doesn't thicken the same way that heavy cream does. Also, I haven't found a vegan cheese substitute I like, so I went without. Could use some umami flavor though. Thanks Gianni; keep em coming!

  2. Nice dish. I made something last week which turned out very good. WW Penne, asparagus, sun dried tomatoes, artichokes. I used garlic/oil, white wine and thickened with chicken broth/corn starch. I garnished with sliced black olives. Rob

    I see you are using a different pasta in this dish. The DeCecco brand. This pasta is available in my area, how do you like it compared to other Italian pastas you have used.
