  1. I work at a nandos and we let the chicken sit in the piri-piri sauce for 24 hours before cooking it. Also we put way more sauce on it. I would say 3 or 4 times as much. and we constantly flip the chicken when cooking and continually marinade it. Now I don't actually cook the chicken so that is all I really know.

  2. Nandos chicken is boiled first then marinated overnight. when it reaches the restaurant they coat it in your choice of spice and then grill the skin on the flame. thats how it still tastes really moist.

  3. It's kinda sad to see how many people are asking about the other 3 or why there are only guests with Ben, etc. Can't really blame them, there are only a few of us who have been here that long but still makes me a bit sad.

    Also nandos chickens are grilled, not oven roasted. Not really authentic nandos experience. I hardly call this a "recreation" but more of a poor interpretation of nandos chicken

  5. turns out more nandos like and tastes better than the sauces in my opinion, and probably healthier as those are all natural ingredients, no added sugars. Ive been using the sauces at home all this time and for some reason its never the same as the restaurant

Thanks lads, we don't have Nando's in the U.S., but I had heard nonstop raves about it and was able to make your recipe — substituted dry Thyme and hot Asian red chili paste because I didn't have fresh on hand. DEE-LICIOUS! For others following from "Fahrenheit" areas, the oven temp is 400-degrees.

    When I have fresh Thyme and chilis on-hand, I plan to put the chicken and marinade into a plastic bag and let it rest in the refrigerator for about an hour, so the flavor gets into the flesh.

  7. Rewatched this to refresh my memory of the recipe, made this ages ago and loved it, figured it's time to do again! Ben looks so little in this video, haha! It's weird to go back into your archive and rewatch videos. This recipe is honestly a classic in my home ;)
