    8 ounces of cut chicken (thigh)
    1/2 teaspoon of rice wine
    1/2 teaspoon of dark soy sauce
    pinch of sugar
    pinch of salt
    half egg white
    1 teaspoon cornstarch
    mix chicken, wine, soy sauce, sugar, salt, egg white in bowl.
    let sit and marinate

    — prepare sauce —
    1 tablespoon of oyster sauce
    1 tablespoon of hoysin sauce
    1/2 tablespoon of dark soy sauce
    1/2 tablespoon brown sugar
    1/2 teaspoon sesame oil
    pinch of black pepper
    1/4 cup chicken stock

    — veggie prep —
    green onions. cut separate white and green
    half jalepeno, unseeded, cut thin slices
    clove of garlic, grated
    1/2 teaspoon ginger, grated

    on wok, heat and oil
    cook white green onion first, then green ones. set aside.
    re oil wok
    sear chicken, both sides. add jalapeno
    add garlic, then ginger
    add sauce

    serve after sprinkling sesame seeds
