  1. Also, the inclusion of Asian pears (or other pears) is not just for taste: there is an enzyme in pears (and also in Pineapple and Papaya fruits) that will tenderize the meat. I did some of these last weekend and while I didn't use his recipe, they turned out very good.

  2. As a Korean who has been making Kalbi for several years now, I think the fish sauce is a great idea.  It will add another dimension, and I dare say that you are innovating a (much needed) evolution of this classic dish. My only suggestion is that I use 2 gallon Ziploc bag to evenly marinade the ribs.
