  2. Low-cal pumpkin spice cupcakes (not how it would turn out with gluten free mix, but totally worth a shot)
    1 – 16oz can of pumpkin puree
    1 – Box of cake mix of your choosing (get spice cake for pumpkin spice, double chocolate is amazing too!)

    Mix pumpkin puree and cake mix together (only these two ingredients!), spoon into lined muffin pan and bake for 15-25 min (you have to experiment the first time or two – test with a toothpick until it comes out clean)

    Let cool and eat plain as muffin or top with low fat cream cheese frosting 🙂

    For calorie count – add total dry mix calories and total pumpkin puree calories and divide by amount of muffins/cupcakes made! Enjoy!
