  1. All fine except the garlic, mayonnaise, oregano, onion, peperoncini and parmigiano reggiano! I'm sure this salad tastes good, but Italians would never use most of those ingredients in a salad… Always remember: Italian cooking is essentially simple, with few good ingredients. Tip: a good olive oil is a game changer, use extra virgin oil for cooking (except fried cooking, in that case olive oil is not good). Tip 2: Italian olive oil tastes differently depending on the region it comes from, you have to find the right combination depending on the dish and your tastes: my personal favorites come from Sardinia, Marche, Puglia and Tuscany
