  1. You want the final temperature to be between 58-62 for rosé anything above 62 is well done. If you stop grilling at 62 and let it rest. The temperature will still rise a little (maybe 2 degrees). Especially when you are grilling direct.

    I would advise to stop grilling at 56 degrees and let it rest. The resting time must be the same time that you grilled it.
