  1. This recipe works great. To those with the measurement issue get over it. It is a marinade. I have made other recipes for Char Sui and this is the best yet. Made it in my Weber Smoker. Excellent!  I suggest you adapt to taste as with most marinade recipes, change proportions to your taste. I bet the PitMaster does not even measure when he makes for himself.

  2. hey ich have a question about that soy sauce combination… a Chinese flatmate once told me the you have a special definition when you use light and dark soy sauce.. what was it again? can you show me the signs and pinyin?
