  1. Read the title. It doesn't say easy chicken, or cheap, or convenient, or fast, or simple for the home cook. It says PERFECT. Perfect means it doesn't matter how inconvenient or difficult or expensive or time consuming or high-skill the process is, so long as the best possible result is produced. The man has 10+ Michelin stars and is universally considered by others in the industry as one of the best chefs in the world and 21st century culinary pioneers. So when he calls it a recipe for perfect crispy roast chicken maybe don't make fun unless you've tried it.
