Reply When I was younger I used to like meat in my sauteed mung bean stew(well it does taste different without), but now it doesn't matter and both still taste great. I wonder how the coconut substitute tastes like. I highly recommend you put ginger(because a lot of people don't) in your munggo, and lots of it! And the effect depends also on the ginger you have. For some reason some gingers have stronger aroma and more flavorful than others. I can't exactly say how you could determine that just by its physical looks when you buy it at the market. This keeps us from developing gas after eating the cooked dish. I wonder if you have heard of this. I have always practiced this step when I cook this dish.
