Were I'm from..we love our aubergine(melongene)…roasted with garlic cloves stuck into it…then we scrape off the charred skin…we put oil into a skillet…add onions…scotch bonne peper..and whatever other herbs we might like…and fry these up in high heat…then switch off the fire and add the aubergine….hmmm just
    let cosumme…delish….
