  1. Omg…totally Chinese comfort food! I think most Chinese kids favorite dish growing up! Every family has their own variation. Definitely the dry shitake mushrooms and preserved turnip are a must. That give the umami flavor! My current variation is ground turkey meat, rehydrated shitake mushrooms, rehydrated wood ear fungus, water chestnuts, cilantro, green onions, soy sauce, dash of xiao shing wine. I also sprinkle thinly sliced Chinese sausage (lop cheung) on top before steaming. I was looking to see how others made this dish. Thank you for sharing! I will try added fish sauce next time! I get my water chestnuts frozen or canned. There are so many different types of preserved vegetables in the Asian markets now…sometimes I will swap the preserved turnip for some preserved vegetable in a can or in a packet.
