  1. The beef marinade that your doing is called velvetting, try adding 1 egg white to your marinade next time , you will find this will make your beef even more tender. One more thing with your wok . Get your wok hot then add 3tbs cold oil swirl around the wok then discard the oil into a suitable bowl then add desired amount of oil you need to cook, this way your food will never stick to your wok again.
