  1. yellowtail is not very common in most parts of the US, it's better to use skipjack tuna as it's far more readily avalable in the Midwest; there's really no real difference that the average person could tell unless you're very used to eating both skipjack and yellowtail (and I doubt 95%+ of americans eat much fresh yellowtail east of California).
