  2. I'll have to try this in the oven. Right now I have one going in the crock-pot with sauteed onions and mushrooms, and one jar of pork gravy. The stuff in my oven always comes out over cooked and dry….. I think the temp settings may be off and have an oven thermometer coming. Thanks for the ideas!

  3. I changed up the spices for the rub, garlic, onion , red pepper flakes, salt and pepper, crushed peppercorn and garlic rub and bell pepper herb rub. I rubbed the pork down with melted butter and oiled the pan. Rolled the pork in the rub and placed in a pan to roast in the oven at 350 for 30 min's. After 20 min's I added chopped onion and basted the pork, smells great, back to the oven for the remainder of the time. I served up seasoned green beans and mashed creamed potatoes, yum!

  4. cooking NOW..
changed up the spices on the rub..
celery seed, summer savoy, garlic power, salt, pepper

the side I'm making is stewed okra, tomato, and onions

  6. chef, I have a real problem with brisket. it always comes out tough when I cook it in the oven.  I have to place in crock  pot for another 3-4 hours to loosen it up. any suggestions? I cook the brisket, usually about 3-4 lbs, at 300 degrees for 3 hours.
