I get in a rut sometimes as well, so called my mum and she gave me a very good recipe and I would love to share it with you. It's an oven roasted dish with: zucchini squash, yellow squash, mushrooms, shallots, OR white onions, you could even add carrots, as well (cut all in quarter size, not too small) drizzle in olive oil, sprinkle salt and black pepper. I just kept checking it to make sure it wasn't over done, or not done enough, wish I could remember how long to bake it. And I served it with a baked sliced chicken breast meat, simply seasoned with salt and pepper. But I gave it a try, and it turned out amazing. I made a lasagne but I made it Mexican by using tortilla wraps for the layers instead of pasta and I spiced the meat mixture with taco seasoning.
