I recently tried the method of: "air-drying" a whole chicken before roasting it. It involves rubbing the chicken with: 1 tbsp of salt, 1 tsp baking powder, and 1 tsp of pepper. Put it on a rack over a tray, and leave it in the fridge overnight. This makes the skin extra crispy when it roasts. I modified the recipe a bit by rubbing a compound butter under the skin, and it still turned out super crispy with moist, juicy meat. It was fantastic! Have you ever tired this method?
